Eating Breckenridge Part 2

Heyyyy!! So I forgot to post last week. So I apologize to all my billions of fans. I know you were checking every 10 minutes all day. Well, I’m sorry. Now it’s time for Breckenridge part 2.

We hit the slopes bright and early, if getting out there at 10 in the morning is considered early. We decide to start off the day with a little bit of an extremely overpriced meal. So we grab a bite at a place called Ten Mile Station. It was so, so, not too bad but hey you pay to eat on the mountain. I think I got a vegetarian calzone. It he spinach on it. Yeah, nothing special.

Enough of that. During the evening we decided to grab a bite to eat at a place called South Ridge Seafood Grill. It was amazing!

When we arrived we did not have a reservation. Luckily there was room at the bar and we all ate there. I will begin by saying that the bartender that took care of us was amazing. Probably the best service ever. No doubt. The food was equally amazing.

For an appetizer we got some sort of tuna dip with pita bread. Bombin. Very fishy tasting… But it’s tuna dip it’a supposed to be fishy. We had another appetizer but… Yeah I don’t remember. It’s been a few weeks. I’m sure I will remember right after I finish this post.

Main course equals lamb meatballs! What? Yeah. You want them. I want them. Everybody wants them. They came with this stuff called polenta. I had never had it before but it was good. Supposedly it’s like grits. I know I probably sound like an idiot because I have a food blog and don’t even know what food I was eating. Lamb meatballs. That’s all you need to know.

If you want to know exactly what it is then check out the menu on the link above.

Dessert was some homemade espresso cake thing. I totally should have not procrastinated on this blog post. I would actually be able to remember what I ate. I do remember it was crazy good. It was pretty much like a mousse cake or flour less chocolate cake with an espresso anglaise. Yes if they have it I would recommend it. Just eat it like a cake cannibal. Make a mess. So what it’s a nice restaurant. Eat messy.

My First Time Baking Cupcakes

So it’s like 45 minutes until the end of today! This may or may not be a short blog post!! I guess I will get started. Last weekend I decided to make cupcakes!! Of course, it was my first time to make those delectable little creations. What kind of cupcakes did I decide to throw together? Well, I took a suggestion made by my wonderful girlfriend and I made red velvet cupcakes with cream cheese frosting! Obviously I didn’t know how to make cupcakes so I borrowed a wonderful recipe from the Brown Eyed Baker. I will say that the cupcakes were good but not to die for, however that was probably more my fault than anything! For some reason I had extreme difficulty creaming the butter and sugar (which should be extremely easy). However… The frosting… To die for!! So so so good!! I could literally eat the icing like ice cream – a gallon at a time!! So how about some pictures? Alright I will give you pictures!

Oh Sweet Chariot!! It’s a Cannoli Tart!!

Looks like it’s that time of week again! foodtrash time!! So, last week I wrote about these delicious cookies from the blog How Sweet It Is. Yes those cookies were good. So good that they should probably have their own religion. Now, since that cookie recipe was such a success, I do believe that I am obsessed with How Sweet It Is. So much so that I am writing this week about another recipe I took from them, that they took from somebody else! Does that make sense?? Well what did I make you ask? Did you ask that? No. Well lets pretend you did. Ready to have your mind blown? Ok well here goes nothing!

BAM!! Cannoli Tart!!!

20130201-194921.jpg

Yeah, this was soo freaking good and easy to make!! Here is the recipe for those of you that want to give this beauty a try.

Don’t be scared, this is literally so easy to make that I couldn’t screw it up! Of course, leave it to me to totally forget to take pictures of the process until my girlfriend reminded me!! Luckily, I did get some pictures, so let your mind go on a journey to fantasy land via your eyes.

Oh yeah doesn’t that look aaaahhhhhmmmmmaaaaaazzzzziiinnngggg!! Chocolate chips!!!

20130201-195532.jpg

Yeah, so I suppose I’m not really the best at making pie crust…

20130201-195841.jpg

What you don’t see is how I forgot to put the nonstick spray on the pie plate… Basically I had to take the pie crust out, then spray the nonstick spray on the plate, then reform the crust and put it back in. Oh and did I mention that I kind of broke the crust and dropped some on the floor. No worries though, 2 minute rule! I’m kidding! I threw the part away that fell on the floor!! Want more pictures?? Ok!

Oh and here is an awesome fire I made! Me man! Me make cannoli tart and FIRE!!!

OMG!! Cookie!!!!! (Brown Butter Oatmeal Chunk)

It’s foodtrash time!! For some reason I have been excited to write this post all week and now that it is time to actually write it I keep procrastinating. Oh well, I guess I will go ahead and plaster these words to this page. So what is tonight topic? Cookies!! I love cookies!! If you don’t like cookies well then you are the scum of the earth. Ok maybe that was an exaggeration. Maybe not. But it probably is. Not. Ok I will stop with that now. So yeah, I love almost every cookie alive, unless it has raisins in it. I hate raisins. Bleh.
So last weekend I decides to make some cookies. Let me tell you, they were AMAZING!!!! Not only that, but I came up with the recipe all by myself!!! Ok that was a lie. I found the recipe on what is probably my favorite blog “How Sweet It Is”. So if you didn’t click that link and are still reading this blog then I will tell you what kind of cookies these are: Brown Butter Oatmeal Chunk. Which is exactly what i felt like after chowing down on these puppies. But hey, oatmeal is good for the heart right? Yeah, so brown butter, if you don’t know what it is well you should. It’s pretty much incredible. Yeah. Incredible. Here’s some pictures of me whipping these puppies up:

Food and Good Company

Food has long been a reason for fellowship. Throughout history people have gathered together in order to hunt, prepare food, or feast. I mean, think back in your own life. Most of the time when you get together with friends does it involve eating? Well, for me at least, the answer is yes. Whether it is having dinner together as a family, going to lunch with friends or colleagues, taking customers out to a business dinner, or going out to eat with a significant other. This is one of the things I love about food! I think I love the “getting together with good friends or family” part more than I like eating it. Well, don’t get me wrong, I do like eating it quite a bit.

I think this is quite odd though. Eating is something that we have to do! If we, as humans, go too long without eating food I’m pretty sure, from what I’ve read on Wikipedia, that we die. Well, I guess we die anyways whether we eat or not, sooo I guess that doesn’t matter too much! Anyways, I think that it is odd that we have taken this necessity to survival and made it something that brings people together. Even though I find it odd, I think that it is great! Many great memories, for me at least, have been made around the dinner table. As I was thinking about what to write for my blog this week, I began to think of all the fun times and great conversations that I have had with my mouth stuffed full of food (although it is rare to find me with my mouth not stuffed full of food). What makes this an even more incredible thought, is to think about all the great memories that have been made throughout history around the dinner table, or dinner rock, or dinner tree, or dinner dirt, or whatever people used to eat on.

So, I think that is why I decided to write a blog about food. I thought it was because I love food (which, of course, I very much do), but I believe it is much more than that. It is the people you are eating, I mean, with whom you are eating, that can make a meal fantastic. Well, that is until there is only one roll of sushi left and you have to stab someone’s eyes out with a chopstick so that you can get it!!

To food and good company!

Fantasy Fudge!!!

NNNNNNOOOOOOOOOOOOOO!!!!!!!!! I had been writing this blog post on my phone and I accidentally DELETED IT!!!! NNNNOOOOOOO!!!!! AGGGHHHHHHHH!!

Ok, I’m over it. Now lets redo this jazz. Fantasy Fudge!! Ok, ok, I know that in the last (and first) blog post I made I said that the next post would be about the history of food… Well! Surprise!!! I lied!! It’s about fudge!! Actually I more or less just changed my mind. I can do that though because I run this thing. Ain’t got no rules!! But I guess I will let you in on a wee bit of history – Fantasy Fudge has been around for a while. How’s that for history? You’re welcome.

So, lets get down for business! It’s about Christmas time!! Today is the 21st of December, that means Christmas is about a 4 days away. This is extremely exciting for me! If anyone loves Christmas, I love Christmas!!! So it’s only fitting to cook up something holiday style. For that we (my girlfriend and I) chose Fantasy Fudge.

Now it’s time to fantasize!! Close your eyes as you read this and imagine the silky, smooth, and sweet fudge slowly melting in the moist, warm, and tempting hallows of your body. Also known as your mouth. Ok, open your eyes!! If that doesn’t get you drooling then somebody needs to LOCK YOU UP!! Cuz you CRAZY!! So get drooling!!

Now that your sweet tooth is as wet as New Orleans after Katrina it’s time to let you in on how to cook this bad boy fudge. You could just google it, or look on the back of JET PUFFED Marshmallow Creme. But we used this recipe. It’s slightly different, but I doubt the taste would vary by much. Just be warned, DON’T and I repeat DON’T use condensed milk. That would cause your fudge to deceive you!! It may look like it’s turning out alright, but it’s just a trick.

20121221-131306.jpg

You will see that and go “oh! It looks great!” And you will touch your finger to the burning hot mixture and suffer a burn just to taste the amazing concoction before you and… It will taste AMAZING!!!!! But when you finish boiling it then BAM!! It stabs you in the back and looks like this!!!

20121221-131628.jpg

And you will be oblivious like me and think “ahh it’s supposed to look like that!! You just have to mix it around more and it will look like fudge! It will taste great!” And someone who is not me (my girlfriend) will say “that’s NOT how it is supposed to look! It will taste nasty! We messed it up!” And you won’t believe her and will taste it anyways and… It will taste NASTY!!! Don’t do it!! It is not the same as the fudge in your fantasy!!!

Just avoid all that trouble all together and use evaporated milk (but don’t think about drinking the evaporated milk) and it will turn out much more like your fantasy!

20121221-132303.jpg

20121221-132324.jpg

And viola! You will just want to put it in your mouth!!!

20121221-132449.jpg

As you can see, I decided to put walnuts on half of the top of the fudge because I love walnuts, but not everyone wants nuts on their fudge. Hence, I only nutted half of it. Also, we used real butter instead of margarine.

Anyways, try to make some of this yourself! And if you have any other fudge recipes worth fantasizing over, then shoot ’em my way! Keep an eye out for the next post coming up soon! Meanwhile, follow foodtrash on Facebook, twitter, Instagram, and all that stuff. Have a merry Christmas and happy eating!
